Ingredients for 10 waffles
355ml warm but not hot water (to allow the yeast to work)
2 ¼ teaspoons dry yeast
3 cups (450g) sifted flour
Pinch of salt
3 large eggs, separated
1 extra egg white
1/3 cup (75g) sugar
230ml milk
8 tablespoons melted butter
2 teaspoons vegetable oil
2 teaspoons vanilla extract
Preparation
1. Take a separate bowl, half fill it with warm water and dissolve the yeast into it
with a pinch of sugar.
2. Leave the yeast for 5 to 10 minutes until the mix foams up.
3. Attach the whisk to the mixer head and rinse the mixing bowl with warm wa-
ter, to warm it up.
4. Add the 3 egg yolks with 1 egg white, the sugar and the yeast, to the mixing
bowl. Mix the ingredients on the "Folding/Kneading" setting, only until the in-
gredients are well mixed.
5. Add the rest of the warm water through the feeder tube then add the milk, coo-
king oil and vanilla extract. Mix it until the ingredients are well mixed.
6. Take off the whisk and attach the scraper beater to the mixer head.
7. Turn the speed to the "Folding/Kneading" setting and gradually add the flour
to the dough through the feeder tube. Stir just long enough to make the
dough smooth.
