11. Reduce the speed again and gradually add the hot chocolate cream through the
feeder tube. Increase the speed again and stir for about 20 seconds.
12. Switch off the appliance, pull out the plug from the power socket and lock the
mixer head in the upright position.
13. Add the egg white mixture to the chocolate cream. Lock the mixer head in the
down position, attach the splash guard and mix carefully at low speed ("Knea-
ding/Folding").
14. Pour the finished mousse into serving bowls and leave to chill for at least 2 hours.
