Energy saving tips

• When cooking on the gentle or quick setting, regulate the hob so that the cooking
indicator does not rise above the respective cooking setting and the pressure regulator
does not start to release steam
• Use a hob of the appropriate size (see specifications above).
• Select cookware size according to the amount being cooked
• Use the stored heat of the base. Switch off the hob before the end of the cooking time
to use the cooling time

6. Cooking with the vitaquick

WARNING!
Make sure that the liquid in the pressure cooker never evaporates
completely! (See instructions in chapter 5)
You can cook in a variety of ways with the pressure cooker:
• Braising meat
• Soups and stews
• Vegetables and potatoes
• Cooking rice
• Cooking fish
• Deep-frying (without lid)
• Steaming food
• Cooking frozen foods
• Preserving
• Juicing
• Sterilizing
• Cooking a whole dish

Preparation

Add the ingredients to the pressure cooker according to the recipe.
Observe the specified filling quantities (chapter 5).
Then put the lid on and close the pot.
If the locking indicator (Fig. A-8) in the lid handle is green, the pot is ready
(chapter 4).

Selecting a cooking setting

Your vitaquick
allows you to select between two cooking settings: Gentle cooking (1st
®
ring) and quick cooking (2nd ring).
Cooking setting 1 (1st ring), approx. 109°C (gentle cooking)
(40 kPa operating pressure)
for very delicate dishes such as fish and vegetables
Cooking setting 2 (2nd ring), approx. 117°C (quick cooking)
(80 kPa operating pressure)
for all other dishes such as meat dishes and stews

Parboiling and venting

Heat the pressure cooker on the highest energy level.
Steam will escape from under the lid handle (Fig. A-6) and with it the oxygen in the air that
is harmful to vitamins.
This process may take a few minutes. As soon as the Euromatic closes and no more steam
escapes, the pressure build-up will begin. A little later, the cooking indicator (Fig. A-5) will
start to rise.

Cooking indicator

By means of two markings (white rings), the cooking indicator shows you when the
respective cooking setting is reached.
First ring:
Cooking setting 1 (gentle cooking) has been reached.
To cook using the setting for gentle cooking, you have to turn down the energy supply
shortly before the first white ring is visible. The hob must be adjusted so that this first ring
remains visible during the entire cooking process but is not exceeded.
Second ring:
Cooking setting 2 (gentle cooking) has been reached.
To cook using the setting for gentle cooking, you have to turn down the energy supply at
about the same time the first white ring becomes visible. The hob must be adjusted so that
this second ring remains visible during the entire cooking process but is not exceeded.
If the cooking indicator continues to rise after the second white ring appears, you will hear
a hissing sound and steam will escape from the pressure regulator. In this case, the heat
supply is too great and must be reduced. The liquid in the pot will otherwise evaporate.

Cooking times

The cooking times are measured from the time the selected cooking setting (first and
second white ring) is reached.
