"Add step" represented by the icon in fig. 21 pos. G to add a
baking step after the one selected. Enter desired parameters
with the procedure described in "INSERT NEW";

"Save" represented by a disk icon (fig. 21 pos. H) to store
changes;

"Return" to cancel.
DELETE
It is possible to delete a program in two ways:
-
Delete from "Summary program"
-
Delete from "Programs menu"
Press P to access the list of programs; select the program desired to
open the summary screen (fig. 20). Press the "Delete" button
represented by a recycle bin icon (fig. 20 pos. D), press "OK" to
confirm, RETURN to cancel.
It is also possible to access the MENU, select "Programs", press
"OK", select "Delete" and press "OK". "FIND BY NAME", select
the program to be deleted with the "SELECT" button then press
"OK". Confirm deletion with "OK" or cancel the operation by
pressing "RETURN" several times.
IMPORT USB
Insert the USB device into the slot on the right side of the appliance
after removing the plug. The display will show a list of the
directories in the USB device. The <ROOT> item shows the first
level of the file system. Select the directory where the programs to be
imported reside using the "SELECTION" keys. The "+" and "-" keys
enter and exit the selected directory. Press "OK" to perform the
import operation. A message will show the number of the program
correctly copied from the USB memory to the oven memory.
Remove the USB device and replace the cap previously removed.
NOTE:
<NO DIRECTORY> indicates that the USB device
is missing or not inserted correctly into its slot
EXPORT USB
Insert the USB device into the slot on the right side of the appliance
after removing the plug. The display will show a list of the
directories in the USB device. The <ROOT> item shows the first

keys enter and exit the selected directory. Press "OK" to perform the
export operation. A message will show the number of the program

PROGRAM DEFAULT
Carry out this procedure to restore the default programs of the
Manufacturer. Press "OK" to perform the program reset operation.
NOTE:
Any Programs stored in the memory will be deleted.
3.2.2
"MANUAL MODE"
"Manual mode" enables you to operate the oven by using only one
set temperature without the baking timer which generally scans
baking start and stop time.
By pressing the "-" key consecutively, the "Time" parameter is
deleted and the timer icon is shown on the corresponding "+" button
(Fig. 12a pos. U) indicating that the "Manual" mode is enabled.
If the oven is on STOP mode, press the button to reactivate the
"Standard" mode by selecting the desired cooking time.
If during the baking stage the cart must be extracted, press the
START/STOP button and wait for the cart to set itself in position
then open the door and act on the product. If it is desired to re-enable
the oven and continue with other baking sessions, close the door and,
if necessary, press "OK" otherwise press "RETURN" to end the
baking session and turn off the oven.
NOTE:
This baking mode does not use the "Pre-heating"
function or the "Programs"!
3.2.3
"PREHEAT SETTING"
The pre-heat function enables the oven to reach a temperature higher
than desired for baking. The pre-heat temperature is maintained
throughout before baking the product. This compensates heat loss
when the product is baked due to oven door opening.
Pre-heating adjusts set temperature from 0 to 30°C (54°F).
For exampleset temperature 180°C, pre-heat +20, pre-heat
temperature (step before baking) 200°C and set baking temperature
180°C.
Data on pre-heating is displayed graphically as the peak of the set
temperature (fig. 11a pos. item G).
To change the parameter enter MENU, select PREHEATING, press
OK, select the desired value with the "+" and "-"button then press
"OK" to confirm. The main screen will be updated with the new
preheat mode setting.
NOTE:
If the mode setting is not displayed on the main
screen, it indicates that preheating is inactive i.e. set to 0.
3.2.4
STATIC/DYNAMIC CART
It is possible to choose whether to bake using the static (fixed) cart or
the dynamic (moving) cart. Select this menu item to manage the cart.
The cart state is represented graphically on the display by a check
mark symbol on the right of the menu item. The presence of this
symbol indicates that the dynamic cart function is selected. When the
check mark symbol is not present, the static cart function is enabled.
The static cart function is shown on the main screen by the symbol
(Fig. 11b pos. Z).
3.2.5
STEAM EXHAUST
The baking steam exhaust valve is electrically controlled. (fig. 10
pos. 3) and the relevant icon on the display will indicate the state of
the valve.
The valve can be set to one of 2 different positions:
-
(fully closed) (fig. 11b pos. P)
-
(fully open) (fig. 12a pos. T)
Valve opening/closure is a direct access function and therefore it can
be enabled at any time.
NOTE:
Every time that the heating elements are switched
on again by pressing the "Start/Stop" button, the valve will
commence a reset procedure, stopping in the closed position.
- With valve open and hood off (Fig.23 part.A-B) it is possible to
release the steam by natural convection (see Fig.9 part.L).
- To obtain forced suction of the steam present under the hook or
within the baking chamber, it is necessary to activate the hood (icon
Fig.23 part. C, see function "HOOD" in 3.2.5) and position the valve
in the desired state (Fig.9 part.M).
- To activate automatically the forced suction of the steam under the
hood or within the baking chamber during the STOP stage due to an
open door (Fig.9 part.N – pos. X: open door) set the function "On at
the end of baking" (see 3.2.6) which will enable the hood as shown
in Fig.23 part.B
3.2.6
HOOD STATES
The hood parameter can have three different states, corresponding to
three different icons.
1) Icon shown in Fig.23 part. A on a black background indicates that
the hood is off.
2) Icon shown in Fig.23 part. C on orange background indicates that
the hood is on.
3) Icon shown in Fig.23 part.B on orange background indicates that
the hood is on only when the oven is on but not baking, to facilitate
the suction of the steam at opening of the door.
Press the "HOOD" button (Fig.10 part.7) to turn on/turn off the hood
from the dedicated menu: press the "MENU" button then scroll
through the list of items using the "SELECT" button until the
"HOOD" item is reached, then press "OK" to enter the sub-menu:
- "Enable/Disable": turns on/turns off the hood (states 1 and 2)
- "On at end of baking": enables the hood only at the end of the
baking process (state 3)
WARNING!
the suction fan will turn on when the oven is in STOP state.
3.2.7
OPENING THE DOOR OF THE OVEN
The software of the unit is pre-set in such a way that at time of
opening of the oven door the oven turns off independently of its
state. In this case, for safety reasons, the frontal repositioning of the
cart cannot be controlled. oven resumes operating from the state in
which it was before opening the door. During baking, the opening of
the door is displayed as shown in Fig.23 pos. E.
