Serves 4 – 6
Ingredients
2 tablespoons olive oil
1 red onion, finely chopped
2 cloves garlic, finely chopped
1 teaspoon cardamom pods, finely crushed
1 teaspoon ground cumin
1/2 teaspoon ground black pepper
1 teaspoon ground turmeric
1 bay leaf
pinch salt
450 g Basmati rice, washed and well drained
4 cups chicken or vegetable stock
1/2 cup shelled pistachio nuts, chopped
1 cup dried apricots, chopped
3/4 cup currants
1/4 cup chopped coriander leaves
Method
SAUTÉ/SEAR setting
1. Press the SAUTÉ/SEAR button and then the START/CANCEL button. Heat remov -
able cooking bowl for 3 minutes with the lid on.
2. Remove lid, add oil, heat 1 minute.
3. Add onion, garlic, spices and salt. Cover with lid and cook, stirring occasionally
for 3 – 4 minutes, or until onion has softened slightly and spices are fragrant.
