SPECIAL MAINTENANCE
5.1
PRELIMINARY SAFETY OPERATIONS
WARNING!
All maintenance operations and repairs must
be carried out using suitable accident prevention equipment, by
specialised and properly licensed technicians, approved by the
manufacturer.
Before performing any maintenance operation, disconnect the
power supply by turning off the switches fitted on the outside of the
oven and/or the leavening compartment and wait for the appliance
to cool to room temperature.
All precautions are of importance to ensure that the oven remains in
a good state, and failure to observe them may result in serious
damage which will not be covered by the warranty and may lead to
hazard exposure
WARNING!
If the oven needs to be moved, first lift the 2
tilting casings on the sides (fig.5, item F) and RELEASE THE
BRAKES ON THE 2 FRONT WHEELS OF THE CELL, pushing
the release tabs (fig 4E GO item) with a screwdriver. Once in place,
engage the brakes.
WARNING!
The Neapolis 4 model must always have the
baking chamber locked to the leavening compartment with the 4
screws (fig.5 part.T) and the appliance must always be anchored to
the floor by means of the 4 supplied brackets (fig.5 part.Z). If these
locks are removed for maintenance, cleaning, etc., then it is essential
to reinstate them.
WARNING!
Periodically (at least once a year), and every time
problems occur during operation, the state of the oven must be checked
by a specialist technician, who needs to look at the condition of the oven
and inspect inside the electric panel and the steam pipe, cleaning any
dust away. Also access all removable compartments, side, top, front, and
rear, and carefully clean out any dust or flour deposits inside.
5.2
GENERAL CLEANING
After carrying out the operations described in point 5.1 above, clean the
appliance as follows.
Regularly clean the appliance in general.
NOTE:
To clean the baking surface, use the CLEANING
FUNCTION by thermo-reduction (point 3.2.2 section M) or use
delicately a suitably long soft brush. IT IS STRICTLY
FORBIDDEN TO WET THE BAKING SURFACE EVEN WITH A
DAMP CLOTH, BECAUSE THIS MAY IRREPARABLY
DAMAGES THE BISCUIT-WARE.
IT IS PROHIBITED TO STRIKE THE BISCUIT SHELF WITH
THE PEEL AS THIS WILL CAUSE IT TO BREAK.
NOTE:
Be careful not to hit the side/rear refractories, any
impact could break them; if this happens, the functionality of the
oven is not compromised; any cracks in Biscuit-wares may occur but
they do not compromise the functionality of the oven.
After leaving the appliance to cool down, carefully remove, from internal
and external parts, except from the biscuit-ware, all the residues that
might have collected during cooking, using a damp sponge with a little
soapy water, if necessary. Rinse and dry the areas, being sure to wipe
parts with satin finish in the direction of the finish.
WARNING!
Carefully clean off regularly any fat or grease
that may have dripped during cooking as this is a potential fire
hazard.
WARNING!
Based on the use of the appliance it will be appropriate to remove
periodically the biscuit-ware elements as described in point 5.3.5 and
remove from underneath them all the baking residues.

WARNING!
Never clean the appliance with water jets or
steam cleaners. Always take care to ensure that the water or other
products use does not come into contact with electrical parts.
The use of toxic or harmful detergents is strictly prohibited.
NOTE:
Do not use solvents, detergents containing aggressive
substances (chlorides, acids, corrosives, abrasives, etc. ...), aqua
regia or equipment that could damage surfaces. Before starting up
the appliance again, make sure that none of the cleaning equipment
has been left inside.
WARNING!
In order to avoid fire hazards, the entire inside
of the vapour exhaust duct (Fig. 4A part L) must be cleaned
regularly (at least once a year). To gain easy access, remove the front
hood (Fig. 4A part G) and the vapour exhaust duct (Fig. 7 part A-
B), open the draught regulating valve completely (Fig. 14 position
O) and clean the entire duct with a square steel flue brush, taking
care to remove all carbon residue. If the vapour extractor is fitted
(fig.7 part E) clean its entire interior thoroughly, including the fan
blades. At the same time you should also clean the entire chimney
(fig.7 part.B) where the oven discharges. Carry out the operations in
reverse order for reassembly.
5.3
REPLACING PARTS OF THE BAKING CHAMBER
5.3.1 REPLACING THE LIGHT BULB
Given the heavy workload to which the light bulbs are subjected, in time
it may be necessary to replace them.
NOTE:
THE
NEW
TEMPERATURE LIGHT BULB AND SHOULD NOT BE
TOUCHED WITH BARE HANDS, BUT WITH GLOVES OR A
CLOTH IN ORDER TO AVOID COMPROMISING ITS
FUNCTIONALITY.
NOTE:
ALWAYS ENSURE THE GLASS COVERS INSIDE
THE BAKING CHAMBER ARE PRESENT, OTHERWISE DUE
TO THE HEAT THAT REACHES IT, THE BULB WILL BURN
AGAIN IN A SHORT TIME ,in the case of a damaged or missing
glass lamp cover (Fig.16 part.A) (in the case of an absent glass lamp
cover, in the corresponding front/side area, the outside of the oven
heats up much more than the same area on the opposite side, if this
situation is found, make sure that the glass lamp cover is present).
Perform the procedure laid down in point 5.1
If the oven is cold, for the version with NON-led lights only ,it is possible
to replace it from inside the cooking chamber itself:
- Unscrew the cover (fig.16 item A) and replace the bulb (fig.16 item B):
- With the aid of a mirror insert the new light bulb and screw on the
cover.
If the oven is hot and for version with LED lights:
- Disassmble the external lateral panel of the oven from the side
corresponding to the light bulb that requires replacement (fig. 5 item. S)
- In the area near the front of the oven, remove the wool container from
the lamp area pushing downward the tab (fig. 16A part F) and then
pulling it outward.
- The lamp holder bracket will be seen (fig. 16 item.D), remove two
screws that lock it, remove the bracket and substitute the light bulb.
- Reassemble the lamp-holder bracket and correctly reposition the wool
container in its seat, THEN PUSH UPWARD THE TAB (Fig. 16A, part
F) SO THAT THE WOOL CONTAINER REMAINS CONSTRAINED
IN ITS SEAT
-Remount the external lateral panel of the oven
5.3.2 CHANGING THE PYROMETER
After carrying out the operations described in 5.1 above, to replace the
heating element proceed as follows:
- Open the sliding door and unscrew the two locking screws
- Disconnect the thermostat faston connectors;
- Replace the pyrometer (Tab. A item 20)
