3.5 Hints and recommendations for cooking

Fire hazard!
Oils and fats heat up quickly and can ignite spon-
taneously at high temperatures.
Take care when deep-frying or heating food that
contains a lot of oil or fat and do not leave it
unattended.
Simmering and cooking rice
Simmering refers to the gentle cooking process in hot
water below boiling point.
Aromas and valuable ingredients are preserved.
• Use this cooking method for soups and stews, or
sauces.
• To do this, keep the temperature of the cooking water
just below boiling point, at about 85˚C, and not above
95°C, so that only occasional bubbles rise to the sur-
face of the cooking liquid.
• Note that some dishes, such as spring rice, require a
higher temperature setting than the lowest to reach the
cooking point within the recommended time.
Roasting
For roasting juicy, tasty steaks:
• Allow the meat to rest at room temperature for approx.
20 minutes before cooking.
• Heat a heavy pan.
• Brush both sides of the steak with oil.
Put some oil in the hot pan and put the meat in it.
• Turn the steak only once during the frying process.
The exact cooking time depends on the thickness of
the meat and the desired cooking level
and can vary from approx. 2 to 8 minutes per side.
Press on the steak to estimate the cooking status:
The firmer it feels, the more „well done" it is.
• Before serving, allow the steak to rest on a warm plate
for a few minutes so that it can relax and become
tender.

Stir-frying and wok dishes
• Choose a flat wok suitable for glass ceramic or a large
frying pan.
• Keep all ingredients and equipment ready, as this coo-
king method is relatively quick.
If you want to prepare large quantities, divide them into
several portions.
• Preheat the pan briefly and add about 2 tablespoons of
oil.
• Always cook meat first, put it aside and keep it warm.
• Stir-fry the vegetables.
Turn the power control of the cooking zone to a lower
setting as soon as it is hot but still firm to the bite
and add meat and/or sauce if necessary.
• To cook all ingredients evenly, stir gently.
• Serve the finished dish immediately.
