5.3 ICE-CREAM PRODUCTION

After the machine has been installed according to the
instructions reported in chapter 3 and carefully
cleaned and sanitized according to the instructions
reported in charter 6, proceed to start up the ice-
cream production as follows:

5.3.1 Models with gravity feeding.

Check that the master switch is closed, the STOP
pushbutton is lighted up and that the water tap is
open (for water-condensed versions only).

Lift the cover and draw the feeding needle out of
the tank bottom.

Pour the mixture into the tank (max. 6 litres) at
conservation temperature.

Press the MIX pushbutton and let rotate for a few
minutes.
This operation facilitates to fill the mixing cylinder
preventing icing, which could block the beater and
cause an alarm condition.

Replace the feeding needle into its seat.

Select the desired volume increase by positioning
the shutter on one of the seven available
positions; the greater is the value, the greater is
the quantity of product introduced in the cylinder
and as a consequence a reduced quantity of air
in the ice-cream dispensed. On the contrary, the
nearer is the value to 1, the greater is the quantity
of air in the product.
The position 0 corresponds to the complete closing
of the batch inlet opening. For this reason it must
never be used during ice-cream production.
Particularly thick batches require that the shutter is
set to high values (4, 5 or 6); otherwise there is the
risk that the machine is blocked due to an insufficient
feeding of the mixing cylinder.

Reposition the cover on the tank and press the
PRODUCTION pushbutton to start the ice-cream
production.
