Basic recipe for fresh
pasta
• 500 g flour
• 4 medium-sized eggs
• water q.b. to reach 250g total
liquid
Place the ingredients in the mixing
bowl and knead for about 3 minutes
until a compact, homogeneous
dough is obtained.
Pizza base recipe
• 500 g flour
• 15g fresh yeast
• 4 tablespoons of oil
• 1 teaspoon salt
• 250 ml lukewarm water
• a pinch of sugar
Dissolve the yeast in the water and
add the sugar. Pour the mixture
into the mixer together with the
flour and oil and start the machine.
After 2 minutes, add the salt and
continue to knead for another 4-5
minutes.
Take out the dough, create a ball,
flour it and place it in a bowl. Leave
to rise for about 1 hour in a warm,
draught-free place. When the rising
is complete, proceed with the
preparation of the pizza.
Bake for about 20 minutes at
225°C.
Basic recipe for bread
• 500 g flour
• 15g fresh yeast
• 4 tablespoons of oil
• 1 teaspoon salt
• 250 ml lukewarm water
• a pinch of sugar
Dissolve the yeast in the water
and add the sugar. Pour into the
mixer, together with the flour and
oil and start the machine. After 2
minutes, add the salt and continue
to knead for another 4-5 minutes.
Take out the dough, create a ball,
flour it and place it in a bowl.
Leave to rise for about 30 minutes
in a warm, draught-free place.
After rising is complete, knead
again for another 4 to 5 minutes.
Take out the dough, shape it as
desired and leave it to rest for
about 1½ hours.
Bake for about 20/40 minutes,
depending on the size of the loaf,
at 220°C.
Basic recipe for
biscuits
• 500 g flour
• 250g sugar
• 250g of butter or margarine
• 1 pinch of salt
• 50ml milk
• 3 egg yolks
Mix the egg yolks with the sugar,
add the butter previously melted in
bain-marie, and the milk. Pour into
the mixer, add flour, salt and any
flavourings.
Knead for about 12 to 15 minutes.
Prepare the biscuits and bake them
at 180°C for 20 minutes.
