TIPS AND RECOMMENDATIONS
Spout / Second Handle : The metal bowl has a spout to make it easier to pour liquids. It can
also be used as a second handle if needed. Warning: use a pot holder or oven mitt if the
bowl is hot.
Safety
Large quantities : if cooking large amounts of food at high temperature (> 90°C), make sure
it does not boil over and cause burns. Respect the maximum recommended amounts. If it boils
over, stop the Cook Expert immediately.
Intense high-temperature mixing : if the temperature is more than 60°C, use a maximum
mixing speed of 15. If you are mixing hot foods, increase the speed gradually.
Using oil or other fats : some foods may need browning. Hot mixtures of oil and water may
cause splattering and result in burns. To prevent this happening, never pour hot oil or fat into
the metal bowl. Never heat oil on its own; adding food to hot oil can cause red-hot splattering.
Make sure that any accessories used are completely dry.
Caramel : when making caramel, handle carefully until it has cooled completely.
Cooking
Cooking times: these can vary according to the temperature or the size and type of the
ingredients used. A winter carrot, for instance, will take longer to cook than a spring carrot.
Always check doneness and cook for longer if necessary.
Even cooking: cut the ingredients into uniform pieces to ensure even cooking.
Milk : milk-based preparations tend to stick (like they do in a saucepan). Use milk at room
temperature rather than cold milk which tends to stick more.
SIMMERING : do not dice ingredients too finely or they will tend to disintegrate during cooking.
Liquid preparations (e�g� curry): when you add ingredients such as chicken and prawns,
cook at speed 0 (EXPERT programme) so that they will not break into pieces.
To rescue a sauce: If a sauce has curdled (e.g. custard at the end of cooking), switch to
EXPERT mode for 1 minute / speed 13 (no heat) to keep mixing.
