1. Safety instructions

1.1 Use as prescribed

Function description
The operator can cook food in this
combi steamer. Steam, hot air and hot
steam are used to do this. This combi
steamer therefore covers nearly all
possible ways of cooking food. The
operator can use it to steam, blanch,
poach, braise, boil, roast, stew, bake,
brown, grill, gratinate, vacuum cook,
low temperature cook, regenerate and
defrost foods. The operator places the
food in containers or on shelves in the
combi steamer, sets the cooking
programme, the cooking time or core
temperature and starts it.
Conditions for use
Combi steamers are intended for
commercial use.
Improper assembly, installation, set-up,
service, cleaning or maintenance as
well as alterations to the unit can lead
to injuries to the installer or operator up
to and including death and damage to
the unit.
The appropriate country-specific
standards and regulations are to be
observed.
1.2 Unfavourable conditions for use
Never operate the combi steamer in
poisonous or explosive atmospheres.
Do not operate the unit in the open
without protection from rain.
Do not cook food in unsuitable open
and closed containers (e.g. tins and
cans).
Do not heat flammable objects such as
oils, fats, cloths, etc. in the combi
steamer.
Do not heat non-food items (except
approved unit accessories).

Attention danger to life
Installation and maintenance
Before opening the housing cover and
carrying out repair and maintenance
work, turn off the building's electricity
supply to the combi steamer. Risk of
electrocution!
The combi steamer is only to be
installed and maintained by authorized
after-sales service personnel in
accordance with these instructions and
the country-specific standards and
regulations.
Attention, danger of injury
Installation and maintenance
Do not install combi steamers close to
deep fat fryers or fat cooking units etc.
Serious danger of burning if water
splashes into hot fat!
Do not install the combi steamer above
units which give off a lot of heat and/or
steam, as this can affect how the
combi steamer functions. Risk of
electrocution!
Maintenance work should only be
carried out on a cold combi steamer!
Danger of burning!
Operation
To prevent accidents and damage to
the combi steamer, the owner must
train staff regularly. The unit must only
be operated by trained employees.
Regular safety instruction of operating
staff is required in accordance with
country-specific standards and
regulations.
