SPECIAL MAINTENANCE
5.1
PRELIMINARY SAFETY OPERATIONS
WARNING!
All maintenance operations and repairs must be
carried out using suitable accident prevention equipment, by specialised
and properly licensed technicians, approved by the manufacturer.
Before performing any maintenance operation, disconnect the power
supply by turning off the switches fitted on the outside of the oven and/or
the leavening compartment.
All precautions are of importance to ensure that the oven remains in a
good state, and failure to observe them may result in serious damage
which will not be covered by the warranty.
WARNING!
Some operations, listed here below, need to be
carried out by at least two people.
5.2

GENERAL CLEANING

After carrying out the operations described in point 5.1 above, clean the
appliance as follows.
Regularly clean the appliance in general. After leaving it to cool down,
carefully remove, from internal and external parts, all residues that might
have collected during cooking, using a damp sponge or cloth and
a little soapy water, if necessary. Rinse and dry the areas, being sure to wipe
parts with satin finish in the direction of the finish.
NOTE:
in the "ICON" version it is recommended to clean the
surfaces with a normal neutral detergent and warm water, using a cotton
or microfibre cloth and then rinse and dry.
WARNING!
Carefully clean off regularly any fat or grease that
may have dripped during cooking as this is a potential fire hazard.
WARNING!
Depending on the use of the equipment, remove
the surfaces every month (or whenever necessary), as indicated in
paragraph 5.3.7 below, and remove all baking residues.
WARNING!
Never clean the appliance with water jets or steam
cleaners. Do not allow water or any cleansers used to come into contact
with electrical parts.
The use of toxic or harmful detergents is prohibited.
NOTE:
Do not clean the tempered glass in doors while it is still hot.
Do not use solvents, detergents containing aggressive substances
(chlorides, acids, corrosives, abrasives, etc. ...) , aqua regia or equipment
that could damage surfaces. Before starting up the appliance again,
make sure that none of the cleaning equipment has been left inside.
WARNING!
In cases of chamber with humidifier, the tray must
be cleaned regularly, as follows:
-
remove the protective casing over the element under the tray;
-
loosen the tray and protection fastening;
-
remove the protective casing;
-
remove the tray by gently manoeuvring the element;
-
after cleaning, refit the parts following the above steps in reverse
order.
WARNING!
In the presence of the aspirator, periodically,
carry out a thorough cleaning of any grille in the air inlet and in the
context, if present, remove it to verify that inside and on the fan there is
no dirt.
5.3
REPLACING PARTS OF THE BAKING CHAMBER
5.3.1
REPLACING THE LIGHT BULB
After completing the operations described in point 5.1, replace the lamp when
the appliance is cold and from outside the cooking chamber.
- remove the right or left side panel (part.5 or 6 table A) by unscrewing the
four fixing screws;
- disconnect the power supply cables
- Using a flat-head screwdriver, pry off the anchor tabs (fig.26 part. B).
- The part being replaced will come off at the point shown in Fig.26 part. A
- replace the component, making sure that the power supply cables are in the
same position as the one being replaced and that the part is well anchored.
- carry out the reverse operations for reassembly.

5.3.2
LCD BOARD REPLACEMENT
After carrying out the operations described in 5.1 above, to replace the digital
baking pyrometer proceed as follows:
-
take off the right side panel (item 6, plate A) by unfastening the four fixing
screws;
- remove the casing by unfastening the fixing screws;
- loosen the nuts on the top and bottom clamps, tightening the LCD board;
- disconnect the LCD board connectors;
- replace the board with LCD (part. 9, plate A);
- perform the above operations in reverse order to reassemble, taking care
that the connectors are inserted in the correct poles.
5.3.3
REPLACING THE THERMOCOUPLE
After carrying out the operations described in 5.1 above, to replace the
thermocouple proceed as follows:
- take off the right side panel (item 6, plate A) by unfastening the four fixing
screws;
- unfasten the thermocouple fixing nut;
- disconnect the two wires feeding the thermocouple;
- replace the thermocouple (item 8, plate A);
- perform the above operations in reverse order to reassemble, taking care
that the connectors are inserted in the correct poles.
5.3.4
TRANSFORMER / CIRCUIT BOARD / CONTACTOR
REPLACEMENT
After carrying out the operations described in 5.1 above, to replace the
transformer / circuit board / contactor proceed as follows:
- remove the rear panel (item 45, plate A) by unfastening the four fixing
screws;
- disconnect the transformer / Circuit board / contactor;
- replace the transformer (item 26, plate A) / circuit board (item 27 plate A)
/ contactor (item 34, plate A);
- perform the above operations in reverse order to reassemble.
5.3.5
REPLACING THE TEMPERED GLASS
5.3.5.1 HINGED DOOR
After carrying out the operations described in 5.1 above, to replace the
tempered glass proceed as follows:
- with the door open, remove the fastening screws (inside chamber);
- remove the internal panel;
- remove internal seal;
- replace tempered glass;
- replace the internal and external gaskets;
- perform the above operations in reverse order to reassemble.
5.3.5.2 UPWARDS-OPENING DOOR
After carrying out the operations described in the previous point 5.1, to
replace the tempered glass proceed as follows:
- with the door open, remove the two fixing screws near the side pins hidden
by the door stop gasket;
- Remove the left side panel to access the mechanism;
- Release the spring;
- Unscrew the grub screw that locks the lever on the pin of the door;
- remove the seeger;
- remove the lever;
- Remove the right side panel to access the mechanism;
- Loosen the screw that locks the pin and spring sufficiently to allow the door
to be removed
- pull out first the right door and then the left one;
- place it on a surface upside down;
- remove the internal panel by removing the fixing screws.
- remove the internal seal;
- replace the tempered glass;
- replace or restore the internal and external gaskets and insulation material
in their position;
- Perform the above operations in reverse order to reassemble.
WARNING!
Before re-positioning the right side panel, using a
compass wrench reload the spring until the tension of the door when
opening and closing is deemed satisfactory.
