II. INSTRUCTIONS FOR USE
This appliance is for food cooking and should only be used by
skilled personnel according to the instruction manual; improper
use is dangerous.
1. USER INSTRUCTIONS
• Read carefullly this manual as it provides important information
regarding the safety of installation, use and maintenance.
• This manual should be kept in a safe place for future reference.
• The installation of the appliance and eventual conversion to other
types of gas should only be done by a qualified technician.
• For any repair consult only an authorized technical assistance
centre and request the use of original parts.
• Failure to observe the above can compromise the safety of the
appliance.
2. START-UP PROCEDURE
Before using the appliance, clean carefully the inside with hot water
and detergent, rinse thoroughly.
WARNING
Always fill the jacket with water before starting the appliance.
If this is not done serious damage can be caused to the stainless
steel recipient and other internal parts.
2.1 JACKET WATER LOADING
This should be done following the following instructions and with
water no harder than 5°F:
• Open the tap fully "E".
• Remove screw closure cap "F" situated on the security unit.
• Pour through the filler the softened water, until it flows out of tap
"E".
• Close the tap and replace the screw tap "F".
IMPORTANT NOTICE:
Before using the appliance it is necessary to make sure that the
water in the jacket has not decreased below the minimum level
indicated.
This is done by opening the minimum level control tap "D" from
which water should always flow. If this does not occur immediately
add water to the maximum level.
2.2 FILLING OF THE RECIPIENT
• Ensure that tap "A" is closed.
• Fill the recipient by opening hot and cold water taps "B" or "C" If
boiling occurs the security valves positioned on the lid could
become obstructed, therefore, if possible the level of water should
be at least 4cm under the marked level(in models with autoclave
lid).
• Close the lid.
WARNING
When closing the autoclave lid, clamps "O" should be tightened
this should be done by way of the elements positioned
periferically opposite. This operation should be done slowly
and uniformly.
When opening the clamps ensure there is no pressure inside
the tank by pressing the breather button of the security valve
"P" on the lid. The unscrewing of the clamps should be done
slowly and gradually.
Check daily that the lid supports itself and every six months the
balance spring on the lid should be checked by an authorised
technician.
However avoid putting hands under the lid when it is open.
2.3 BURNER IGNITION
Gas tap "J" has 4 functions:
off
pilot ignition
maximum power
minimum flame
• Press and turn in an anti-clockwise direction handle "J" from the
"off position to "pilot ignition".
Press handle "J" fully and at the same time press the piezoelectric
lighter "K" this will ignite the pilot light. After approximately 20
seconds of ignition, release handle "J"; the flame should remain
alight. If it does not the process should be repeated.
• The burner pilot light can be seen through spy-hole "L".
• To switch on the main burner it is necessary to turn handle "J"
from "pilot ignition" to "maximum power" or "minimum flame".
• When the steam pressure in the jacket is close to 0,45 bar
(maximum value), security valve "H" will begin to breath.
• The same thing occurs with weight valve "P" (autoclave models)
when the pressure in the recipient reaches 0,05 bar.
• At this point, depending on what is in the cooker, the heat should
be lowered by turning the gas tap to "min.flame" in order to avoid
unecessary vapour loss from the valve.
2.4 END OF COOKING
At the end of cooking carefully open the lid being careful of any hot
steam.
Use drain tap "A" to empty the contents of the recipient.
2.5 TURNING OFF THE BURNER
• To turn the main burner off, position handle "J" to "pilot ignition".
• To turn the pilot burner off, position handle "J" to "off".
At the end of usage.
• Turn handle "J" to "off".
• Close the gas tap.
3 SECURITY AND CONTROL DEVICES
• Security devices:
Manometer "G" which indicates the steam pressure inside the
jacket;
Depression valve "I" which releases the air in the jacket;
Spring safety valve "H" with maximum pressure rate 0,45 bar;
releases steam when pressure reaches the above-mentioned
value;
Screw cap "F" to load water in jacket.
The safety valve should be checked on installation and there-
from at least every six months.
• Only for autoclave models:
Weight breather and spring safety valve "P", positioned on the
airtight lid.
• The valve breaths when pressure reaches 0,05 bar.
• Reduce heat when the valve begins to breath.
Ensure that the valves are always clean in order to avoid
blockage.
4. CLEANING AND MAINTENANCE
• At least once a year the appliance should undergo complete
servicing. A specialised technician should regularly (every six
months) check the security devices and the lid balance.
• Steel parts should be cleaned daily with soapy, luke-warm water,
rinsed and dried thoroughly. For any incrustation use a nylon
