Carob Ice Cream with
Chocolate Flavour
• 1 egg
• 2 1⁄2 cups milk
• 1⁄2 cup carob powder
• 3 tablespoons lecithin granules (if
• 1 teaspoon vanilla powder (not
• 1⁄4 cup Demerara sugar
Prepare like melon ice cream.
Banana Ice Cream with
Chocolate Flavour
• 4 overripe bananas
• 1 1⁄2 cups milk
• 1⁄2 cup carob powder
• 2 tablespoons lecithin granules (if
• 1 teaspoon vanilla powder (not
• 1⁄4 cup Demerara sugar
Homogenise bananas and add ingredients one
at a time, beating in each one well. Or simply
mix everything with a mixer. Liquefy the first
two ingredients then add the other ingredients
without switching off mixer first. Freeze, cut
into slices, and homogenise. Serve immedia-
tely. Makes 1 litre.

Hawaiian Bliss
• 2 overripe bananas
• 1⁄2 cup fresh or frozen strawberries
• 1⁄2 cup finely chopped, unsweetened
pineapple, either fresh or frozen
• 1 1⁄2 cups milk
• 1 1⁄2 tablespoons lecithin granules (if
desired)
• 1⁄2 cup honey or Demerara sugar
Homogenise bananas, strawberries, and pine-
apple. Mix in other ingredients, beat well. Freeze
in an ice cream bowl. Cut into slices and homo-
genise. Serve immediately. Makes 1 litre.
Strawberry Ice Cream
• 1 1⁄2 cups strawberries (fresh or
frozen)
• 2 cups milk
• 2 tablespoons lecithin granules (if
desired)
• 1 teaspoon vanilla powder
• 1⁄2 cup honey or Demerara sugar
Homogenise strawberries in the Champion or
with a mixer. Add other ingredients, and stir or
mix well. Freeze, cut into slices, homogenise in
the Champion, and serve immediately. Makes
1 litre.
