Practical tips for storing wines

q Store wine bottles unpacked -
i.e. NOT in boxes or cartons.
q Old bottles must be stored so
that the cork is always covered.
There should never be an air space
between the wine and the cork.
Storage and drinking temperature
of the wines
Drinking temperature:
q In general, temperatures below 7 °C
appear as unpleasantly cold on the
tongue, around +8 °C as cold and
from +10 °C to +12 °C as pleasantly
cool.
q The range of temperatures for wine
tasting are from +5 to +20 °C.
q Wines that are too cold are not so
appealing, as the volatile bouquet
substances (bouquet = total
characteristic aroma of the wine)
and the extracts are not released
to best advantage.
q At lower temperatures sweet wines
appear to be sweeter than they really
are.
q If the temperature is too high the
wines will develop too quickly as the
volatile substances evaporate very
rapidly.
q The recommended tasting
temperatures are set out in the table.

q Our pull out bottle racks are
particularly useful as they do not
hinder the circulation of air and so
the moisture that condenses on the
bottles can dry off again rapidly.

If a wine is served too cold or too warm
then it loses something of its bouquet
and taste.
q Prior to drinking it, the wine should
be brought slowly to its correct
drinking temperature
(see Tempering).
