CHAPTER 5 REGULATIONS

Regulating the machine can only be recommended as there are different characteristics of:
the dough, the weight, the thickness, the size and the shape of the disk. Therefore the correct
regulating of the machine must be made by experimenting.
5.1 How to regulate the thickness
The machine is provided with a medium (about 1 mm) size regulation for the shapes of pizza. With
this machine you can have different thicknesses of dough to suit all requirements by just turning
the regulating knob F as showed on the lower label (PICT. 8):
· (-) turning anticIockwise for minimum thickness
· (+) turning clockwise for maximum thickne

5.2 How to regulate the temperature
To optimize the shaping of the dough and the non sticking effect of the disks, it's necessary that
the temperature of these is always constant on 140 -150° C (the time needed for the stabilization
is about 15 minutes from the moving down). This function is cancelled from the thermostates,
by turning the knobs A - B clockwise and selecting the corresponding number required.
5.3 How to regulate the temperature regulator
