OPERATION

A. Twist the mushroom (emergency stop) button ¼ turn to the right if it has not been released (fig.3,
n°9).
B. Press and release one of the pushbuttons and the tray proofers will advance one by one and stop
automatically at the next one (fig.3, n°6,11).
C. Press and hold a pushbutton and the tray proofers will keep on advancing as long as the button is
held down and stop automatically at the next tray proofer when the button is released.
D. You can load your MB (fig.4).
E. To use the UV option, set the switch to the UV position (fig.3, n°10). Ensure that the protective
panel (fig.1, n°1) is pulled to the stop position.
To extend the shelf (fig.1, n°2): (fig.6)
A. Raise the shelf.
B. Unfold the two brackets to support the shelf.
For reasons of food hygiene, under no circumstances must dough or flour left on the top of
the machine or outside it, be reused or reintroduced into the food chain.

MAINTENANCE

8.1

Daily, by a trained operator.

Start the UV cycle (if UV option fitted) (7.E).
8.2

Weekly, by a trained operator.

Clean the troughs using a dry brush and if necessary use a plastic scraper to scrape off dough
residues that may be adhering to the felt parts.
Clean the outside of the machine at least once a week; wash the entire body using a non-abrasive
sponge and warm soapy water.
Rinse off using a non-abrasive sponge and dry carefully with a soft lint-free cloth.
Never wash the machine by hosing it down.
8.3

Monthly, by a trained operator.

Clean the inside with a vacuum cleaner to remove accumulations of dough or flour on the chain
tracks and the frame.
Blow out the chains to remove any trace of flour.
