How to heat and dose the milk

Pour the fresh cold milk into the milk jug, filling it half-way.

Use 250 ml to prepare the milk for one cup; use 500 ml to prepare the milk
for two cups.

Purge the empty steam wand for a few seconds.

Place the jug so that the nozzle of the steam pipe is just under the surface
of the milk. Turn the steam tap to maximum power. The milk, warming and
increasing in volume will form a sort of vortex with a sipping-type noise.

Do not move the jug to avoid producing air bubbles

Always keep the steam nozzle under the surface of the milk.

When the milk reaches about 65 °C e and the jug is slightly hotter than the
level supportable by the hand, the foam is ready.
8.
Switch off the steam pressure and remove the milk jug.
9.
Clean the steam pipe with a damp cloth and purge the nozzle with vacuum
steam.
10. If there are bubbles on the surface, knock the jug with little knocks on the
work surface.
11. Turn the milk jug with small rotations to amalgamate the milk well.
12. Use the milk promptly while it is still creamy.
