CONTROLS ON THE FRONT OF THE THERM OSTAT
SET : By pressing it and releasing it, you obtain the visualization of SETPOINT (set temperature). It is
also possible to change its value by acting within three seconds on buttons "UP" and "DOWN". If
you do not push any button on the keyboard for more than three seconds, you go back to normal
mode.
UP : this button is for the increase of values. It is used for SETPOINT variation. By keeping it pressed,
you will obtain a quick increase.
DOW N : like UP, but it is for decreasing the values.
OUT : led associated to the output. It blinks during the visualization and the setting of SETPOINT .

( 9 . 1 ) FI RST I GNI TI ON
Be sure that no external bodies remained in the cooking chamber, give tension by means of the possible gene -
ral switch.
Press ignition switch ( A4 ), rotate the change-over switchs ( A2 ) and ( A3 ) to their maximum, bringing the ther -
mostat at 400°C for about two/three hours, as to clear refractory plan humidity. While carrying out this operation,
keep the chimney suction opened, by pulling ( A7 ) knob.
( 9 . 2 ) FI RST W ORKI NG
Push ignition switch ( A4 ), set the thermostat ( A1 ) at 350°, close the chimney suction by pressing ( A7 ) knob.
Chimney suction shall be adjusted each time by the operator, in order to avoid vapour and smoke over-emission
in the room.
In order to reduce running costs, during pauses, set the oven at low speed, by rotating to the left both ( A2 ) and
( A3 ) knobs, (minimum adjustment).
W ARNI NG
Since the oven id equipped with a safety thermostat, the latter completely cuts out the resistances in case of trou -
bles. In this case, disconnect the oven from the power supply network, disconnecting the cut-out switch.
Then, contact the technical service.
( 9 . 3 ) P I ZZA COOKI NG
For cooking pizza directly on the refractory plan (bedplate), we suggest to bring the oven's cooking temperature
from 300 to 350° with ceiling resistances at their maximum and bedplate ones at their minimum.
For cooking pizza in a little pan or in a baking tin, we suggest to bring the oven's temperature to 300° or 350°
with ceiling resistances at their minimum and bedplate ones at their maximum.
N. B. No variation for the two-chamber ovens is foreseen, since cooking chambers are independent one to the
other, both for what concerns the controls and for the heating system.
CLEANI NG OF THE OVEN
See chapter 7
No need of particular maintenance, but the equipment should be checked by skilled personnel, every four years.
