6. Once the chimney is installed, insert the cooking stone inside the oven.
• Before turning on the oven, use protective gloves to protect your hands and arms.
• To avoid burns, whenever the oven is in operation and it is necessary to open the fuel com-
partment door, it must be opened with the opening handle.
• Use a soft brush to clean the pizza stone.
• If you wish, you can use an infrared thermometer to measure the temperature of the pizza
stone in the oven. When the temperature of the pizza stone is right, you can start cooking
the pizza.
C H ARCOAL
1. Open the fuel compartment door, place a layer of charcoal or a small pile of kindling on the
burner, and then stack the firewood crosswise (the recommended firewood size is 160x15-
35mm and the moisture of the firewood should be less than 10%).
2. Use a lighter to light the wood, close the oven door and heat the oven to the desired tem-
perature.
3. When the flame begins to diminish, open the oven door and slowly add more wood. Don't
add too much at once. Excess firewood can cause flames to come out of the chimney or
door, with the consequent risk of burns.
PE LLE T S
1. Open the fuel compartment door and add the pellets, it is recommended to add approxi-
mately 150 grams.
2. Use a lighter to ignite the pellets, close the fuel compartment door and wait enough time
for the pellets to burn completely.
3. When the flame begins to weaken, open the fuel compartment door and gradually add a
small amount of the pellets several times but do not add too many at once.
Note: Adding too many pellets will result in a lot of thick smoke. The added pellets must
not exceed the top of the combustion chamber, since excess fuel can cause flames to
come out of the chimney or door, with the consequent risk of burns.
