I. Puddings
Basic recipe
Take:
• Fresh seasonal fruit
• 2–4 Tbs of thickener (e. g. papaya,
bananas [are the simplest thicken-
ers], pre-soaked dried fruit, nuts [cash-
ew nuts, pecan nuts or walnuts], seeds
[sunflower or pumpkin seeds]*, flax or
hemp seed oil or pre-soaked flax seeds
[as providers of essential fatty acids])
• Liquid (e. g. freshly squeezed juice, wa-
ter, dairy or soya yoghurt, rice milk, oat
milk, soya milk, potato milk or cow's
milk or lactose free milk, tofu [whisked
with 30 ml of water], kafir from soya or
cow's milk)
Combine fruit of your choice with the
thickener and the liquid of your choice;
puree until the desired consistency is
reached and serve. Begin with less liquid
and add more until the desired consisten-
cy is reached.

Orange and cashew delight
• 1 1/2 cups of cashew nuts
• 2 Tbs of freshly squeezed orange juice
• 1 Tbs of hemp seeds
Puree until the desired consistency is
reached and serve as a pudding or dip.
Apricot ambrosia
• 1 large or 2 small apricots (stoned and
sliced)
• 2 dried pineapple slices (pre-soaked in
warm water)
• 1 Tbs of the soaking water from the
dried pineapple
• 1 Tbs of pre-soaked sunflower seeds
Puree until the desired consistency is
reached and serve as a pudding or dip.
