Dressing

Dressings can be smooth or chunky, de-
pending on the ingredients. If made with
a little less liquid or more of the firmer
ingredients they can be transformed in-
to dips.
Honey and mustard dressing
• 120 ml of honey or agave syrup
• 80 ml of cider vinegar
• 2 Tbs of mustard
• 1 Tbs of diced onion
• 1 tsp of celery seeds
• 1 tsp of turmeric
• 240 ml of thistle oil
• sea salt or crystal salt to taste
Add all ingredients to the container (ex-
cept the oil) and blend. Then add the oil
and a pinch of salt and continue to blend
until the desired consistency is reached.
Spicy papaya seed dressing
• 80 ml of brown rice vinegar (or lime
juice)
• 1 Tbs of diced onion
• 2 tsp of mustard (we recommend Di-
jon mustard)
• 1 tsp of honey or agave syrup
• 1 tsp of hot sauce (or to taste)
• 160 ml of olive oil
• 2 Tbs of papaya seeds
Puree until the desired consistency is
reached.

Tahini dressing
• 60 ml of tahini (sesame seeds pureed
to a buttery consistency)
• 120 ml of lime juice
• 1 clove of garlic
• 1 spring onion (diced)
• 1 stick celery (diced)
• sea salt to taste
Puree until the desired consistency is
reached.
