NOTE
The espresso machine can produce steam continuously for approx. 5 minutes.
Always start with fresh, refrigerated milk. Fat-reduced cow's milk (approx. 1.5% fat)
will give the best results. You should hold a clean, damp cloth at hand for wiping
the steam wand after usage.
1. Fill a metal or china mug up to max. 1/3 of the height with fresh, cold milk. We
recommend to use the provided milk jug and fill it just up to the lower tip of the V of
the spout. There must be enough milk to insert the tip of the steam wand up to at least
1 cm. This will prevent the milk from splashing out, when starting the steam function.
IMPORTANT - If you are not familar with the texturing cycle of the Design Espres-
so Barista Pro, wie strongly recommend to let the machine operate once without
milk for testing the procedure of the machine and the accompanied displays on
the control panel. Additionally, you should read the following steps completely,
before starting the steam function.
CAUTION
– The steam is given off under pressure. For texturing, insert the tip of
the steam wand into the milk, before starting the texturing procedure to avoid splashing.
2. Pre-Heating the Water System: Ensure that the steam wand points to the drip tray.
Then turn the control dial to the right steam icon. The system indicator (dot at the right
side of the control panel) flashes slowly, indicating that the water system is heated for
producing steam. Wait, until a stable and strong steam flow is produced. Leave the
machine give off steam for some seconds for pre-heating the steam wand.
3. Starting the Texturing Cycle: Switch the control dial back to the standby position
for stopping the steam flow. Via the handle (dark rubber sleeve), move the steam
wand into your milk jug, and, at an angle, insert the steam wand tip 1-2 cm
below the surface of the milk close to the side wall of the jug. Then turn the con-
trol dial to the steam icon again for texturing the milk. These steps should be com-
pleted within approx. 5 seconds. The steam should produce a vortex in the milk.
4. When the volume of the milk increases, lower the milk jug a little to bring the tip
of the steam wand near the surface for blowing air into the milk. When using the
provided milk jug, this moment is reached, when the bottom of the milk jug gets
too hot for touching.
WARNING
– Risk of Burns: Always switch back the control dial to the cen-
tral standby position, before removing the milk jug. Otherwise, hot milk could splash.
Do not touch the metal parts of the steam wand with your skin as they will be
hot! After switching off the steam function, hot steam may escape from under the
metal grid of the drip tray due to the automatic purging. Additionally, please keep
in mind, that hot milk will be under the milk froth. Do not tilt your milk vessel.

5. After texturing, first turn the control dial back to the central standby position. Then
remove the milk jug and, via the handle, point the steam wand to the drip tray.
6. Switch to the water icon and back for purging the steam wand for 2-3 seconds.
Then, ensuring that you do not touch the metal parts with your skin, wipe the
steam wand via a soft damp cloth.
7. Pour the hot milk into your coffee and spoon the froth on top.
NOTE
An automatic purging cycle ensures that the coffee will not be burnt, when starting
an extraction after texturing. The espresso buttons (SINGLE and DOUBLE) will be
inactive during the purging cycle (see: 'Properties of Your Espresso Machine /
Steam Wand for Hot Water and Steam').
IMPORTANT - Clean the steam wand daily. Otherwise, residues of milk could
block the fine opening in the tip and cause a stale taste and odour, when using
the steam wand again (see: 'Care and Cleaning').
HOT WATER
WARNING
– Risk of Burns! Even after operation and some time there-
after, hot steam and hot water could escape under pressure from the steam wand
and the metal parts of the steam wand may be very hot. Do not touch the metal
parts with your skin and do not hold your hands and arms near the tip of the steam
wand. Only touch the steam wand at the handle (dark rubber sleeve), when the
steam wand could be hot.
NOTE
The espresso machine is not intended for producing large amounts of hot water
and will automatically stop the water flow, when the limit of approx. 220ml is
reached (approx. 50 seconds).
To use the hot water function:
1. Direct the steam wand towards the drip tray or into a heat-resistant vessel.
2. Turn the control dial to the left water icon. Hot water is given off immediately via
the steam wand.
3. To stop the hot water flow, turn the control dial back to the central standby position.
IMPORTANT - Do not forget to turn the control dial back to the standby position,
when the machine stops the water flow automatically. Otherwise, you cannot use
any other functions.
