Using the oven

Guidelines for using the oven

General recommendations
• For best cooking results, use suitable cookware and
place it in the middle of the grate or tray.
Dark metal moulds can absorb the heat better.
Stainless steel vessels are unfavourable because they
reflect the heat.
• As a rule, it is not possible to shorten the cooking time
by increasing the temperature. (The dish is then usually
cooked faster on the outside than on the inside).
• When cooking on several levels, use the convection
function to ensure that the heat is distributed evenly
in all areas of the cooking chamber.
• The temperature and cooking time depend on the quan-
tity / thickness, consistency, quality and the desired
cooking level.
To determine the exact cooking point, we recommend
using a roast thermometer (not included).
• Depending on the quantity and consistency of the food
to be cooked, more steam is produced in the oven,
which can lead to condensation on the oven door.
This cannot be avoided and does not impair the function.
Please wipe dry after use.
After cooking, do not leave the food in the cooking
chamber any longer than necessary.
Roasting
• Use the top/bottom heat or convection function.
• Dishes made of enamel, fireproof glass, clay (Roman pot)
or cast iron are best suited.
For very large roasts, the grate in combination with a
fat pan is suitable.
• The roast will brown faster in open dishes.
Covered, the roast remains juicy and the oven does not
get dirty.
• Always ensure that there is sufficient liquid in the frying
pan or fat pan so that escaping fat and meat juice do
not burn (odour control).
• Place the roast in the frying pan with the side for ser-
ving first and turn it over after half the cooking time.
Grilling and gratinating
• Use the grill or the doulbe grill function.
Attention! Danger of burns when grilling!
Some parts of the oven are very hot due to the
intense heat. Therefore use kitchen gloves and
grill tongs. Keep children away!
• Observe the grilling process constantly. The food to be
grilled can burn quickly due to the intense heat.
• The grilling should be done with the oven door closed.
Preheat the grill briefly.
46
• Brush the cooking grate with oil to prevent the food
from sticking to it, place the pieces of food on the grill
and insert a fat pan underneath to catch the gravy.
• Turn flat slices only once, larger pieces several times
with a grill tong.
• Dark meats will brown better and faster than light pork
or veal.
• After grilling, clean the oven and accessories to prevent
soiling.
Baking
• Use the top/bottom heat function for dry cakes, bread
and sponge cake. Use only one insertion level.
• Use the convection function for baking on several
levels, as well as for moist cakes and fruit cakes.
• For moist sheet cakes (e.g. fruit cakes), insert a maxi-
mum of 2 trays because of steam formation.
• The baking time can be different for several trays.
It may be necessary to remove one tray earlier than the
other.
• Prepare cookies of the same thickness and size so that
they brown evenly.
• To check the cake / baked goods, insert a small skewer
and pull it back towards the end of the recommended
cooking time. If no dough sticks to it, the cake is com-
pletely baked.
• To prevent the cake from collapsing after removal, you
can try to extend the baking time accordingly and redu-
ce the temperature by 10°C if necessary.
Boiling down
• Use the convection fuction.
• Prepare the food and glasses for boiling down as usual.
Only use standard preserving jars with rubber rings and
glass lids. Glasses with screw or bayonet fasteners as
well as metal jars are unsuitable. The jars should be the
same size and filled with the same contents.
• Only use fresh food.
• For sufficient moisture, pour approx. 1l of water into the
grease pan and place the jars in such a way that they do
not touch each other.
• Insert the grease pan with glasses on the lowest level
and set the convection function at 180°C.
• Observe the boiling water until the liquid in the glasses
begins to bubble. Then switch off the oven and let the
food to be boiled down rest for about 30 minutes.
