Never leave spanners or wrenches
attached to the tool. Before
switching on the knife, ensure that
the blade is properly secured and
all spanners and wrenches have
been removed.

6. Cleaning and maintenance

Before carrying out any cleaning
and disinfection work, disconnect
the power knife
from the compressed air supply
line.
Clean the power knife with a damp
cloth. Do not immerse the power
knife in water.
Do not clean the tool with
aggressive detergents.
Never use the power knife with
compressed air or steam (jet or
steam cleaner).
Ensure that disinfectants are not
brought into contact with food,
whether directly or indirectly.
Observe all relevant safety and
hygiene requirements
(DIN EN 1672).

6.1 Daily cleaning and disinfection

1. Bring the power knife to your workshop.
2. To clean the blade, remove it from the knife
(see Chapter 4.1 "Blade change in the event of
wear" (page 6)) and clean it.
3. Use a brush and warm water (approx.
45...55°C) to remove dirt; if necessary, soak
the blade to dissolve encrusted deposits.
4. Add detergent to the warm water. Distribute the
foam evenly over the cleaned surfaces and let
the detergent work for 15...20 minutes.
5. Wipe off the dissolved dirt and rinse the tool
with warm water.
6. Disinfect the power knife. Always complete
disinfection as a separate procedure from
cleaning! Disinfectants may not be brought
into contact with food!
7. Rinse the power knife with clean water.
8. Mount the blade. For instructions, see Chapter
4.1 "Blade change in the event of wear" (page
6).

The detergents listed above are recommended
products. If you wish to use other products, you are
obliged to test them as regards suitability and
compliance with the applicable hygiene regulations.
6.2 Maintenance
All maintenance work must be
carried out by suitably trained and
authorised technicians.
The knife does not need to be lubricated.

6.3 Storage of the power knife

Store the power knife in a dry room.
