3.7.1
Controlled cooking with basic tags
1)
In the main menu, press Controlled regeneration. [Fig. 3/B]
a) Adjust the SET water temperature. [Fig. 8/1]

Press START HEATING
.
During water heating, the START REGENERATION button is
orange.[Fig. 12/left]
Once the SET temperature has been reached, the display
shows the Controlled regeneration mode. [Fig. 12/right]

Pass the tag close to the RFID reader.

Insert the food into the tank with the tag hanging
outward.[Fig. 13/left]
5)
Watch the progress of each food on the left side of the screen.
Food that has finished cooking moves to the right side and
an alarm sounds.

Remove the food in the finished cycle from the tank.
7)
Pass the tag close to the reader to finish the pro-
cess.
3.7.2
Controlled cooking with tags and
needle probe
1)
Follow steps

Connect the needle probe to the machine. [Fig. 1/9]
The needle probe icon and needle probe temperature appear
at the top of the screen. [Fig. 14/left]

When the cooking time has elapsed and the alarm sounds,
remove the food from the tank.

Pass the tag close to the RFID reader.

Insert the needle probe into the food.

Press
to start measuring the food's internal
temperature. [Fig. 14/right]

The reading is stable when the circle is com-
pletely red.
8)
Press SAVE.
– The machine also saves the value once a certain time has elapsed
(horizontal bar under the completely green circle).

Recipe cooking mode
The recipe cooking mode is identical to the manual cooking mode,
except that in recipe cooking mode there a recipe list is available
[Fig. 3/2] and editable only from the application

Each recipe has the following data:
Recipe name
Same parameters as those defined in the manual cooking mode
(SET water temperature/SET probe temperature/time).

Recipe locked (red, closed padlock)/unlocked (green, open pad-
lock).
– If the recipe is locked, the user cannot change the SET temperature
and time values from the machine's display.
– If the recipe is unlocked, the SET temperature and time values can-
not be adjusted from the machine's display. [Fig. 15/right]
