It's an old tradition in Russia to offer hot tea to
guests and so a good household always has a
samovar with boiling water and tea concentrate
(called "tchainlkJ.
For Russian tea, a strong mixture has to be
preferred, e.g. Grusinian tea or Assam tea.
Prepare a tea concentrate as described above.
Serve sugar, jam and fruits in sugar syrup
C'varenijel. First fi11 approx. 1 portion of tea
concentrate and 2 portions of hot water into a
heat-resisting glass. Then take some sugar, jam
or fruits into the mouth and let the tea flow over
it.
Tea is often served in Russia with salU dishes
such as bliny (small buckwheat pancakes served
with sour cream, caviar and smoked salmon) or
with piroshki (pastries with meat stuffing).

Prepare a strong tea as described above. Heat red
wine and rum together with the spices in a
saucepan, but do not boil. Add the orange juice
and the tea, dilute according to your taste and

of black tea and 2 cinnamon stick, and leave to
stand for a while.

Frbian Teatime "Teetied "
Tea is nearly the national beverage in Eastern
Frisia and is taken all the day long with sweet and
salty dishes as well.
Prepare a strong tea concentrate, e.g. of a Frisian
mixture or of Assam tea, as described above.
The tasty Frisian tea is always served with
"Klun!e" (rock candy) and "Wulkje" (cream
cloud).
Place one large piece of rock candy into the cup
and fill up with tea concentrate and hot water. It
should crackle. Then add one spoon of cream on
top. It distributes in the tea like a cloud, which
explains the name "Wulkje" (little cloud).
Do not stir!
In general one rock candy is enough for two or
three cups of tea.
For the new year the tea is served with a special
shortbread called "Rullerkes" and a qlass of
brandy.

Mix 3 portions of rooibos tea, 1 poftion of apple
tea from dried apple peels and pieces, some
Iemon juice or peels of an untreated lemon and 1
teaspoon of cane sugar.
Prepare a strong tea of the above mixture, dilute
it with warm water and add some honev to
sweeten it.
TlPP:
Instead of honey you may use some jelly bears to
sweeten the tea.
