RECIPES
Juicy beef burger patties
Ingredients for 4 patties, 230 g each:
920 g beef with approx. 20% fat content (550 g beef brisket, 185 g beef neck,
185 g beef calf)
2 tsp fine sea salt
1 tsp ground black pepper
Preparation:
1. Cut the meat into approx. 2 x 2 x 6 cm chunks. For reasons of hygiene, briefly
rinse the worm housing, filling tray, food tray, worm, fixing ring, crossed-blade
knife, pusher and medium grinding disc with hot water. Assemble accordingly.
2. Place the meat on the filling tray. Place the food tray under the worm housing.
Set speed 5 and start. Use the pusher to press the meat into the filling opening.
3. Once the meat has been minced, season with salt and pepper and shape into
patties (see ›Using the burger patty formers‹).

Oriental meat pockets/Kebbe
Ingredients for the Kebbe filling:
100 g mutton, mince once or twice in the mincer
1½ tbsp olive oil
1½ tbsp finely chopped onions
½ tsp grated allspice
½ tsp salt
1½ tbsp flour
Ingredients for the Kebbe wrapping:
min. 450 g lean meat from mutton, veal or beef
max. 150 - 200 g flour*
1 tsp grated allspice
1 tsp grated nutmeg
1 pinch of chilli powder
1 pinch of pepper
*You can improve the consistency and taste of the coating by using more meat and
less flour.
Preparation:
1. Prepare the filling: Lightly sauté the onions. Mince the meat for the filling up to
twice in the mincer. Then mix the filling ingredients together.
2. Mince the meat for the wrappings three times in succession in the mincer (first
with the medium grinding disc, then with the fine grinding disc). Mix the product
with the other ingredients for the wrappings and process it again three times in
succession in the mincer.
3. Unscrew the fixing ring and remove the grinding disc and the crossed-blade
knife (see ›Assembly‹).
IMPORTANT: Take care not to cut yourself on the crossed-blade knife.
4. Reassemble the appliance with the Kebbe attachments.
IMPORTANT: Never use the Kebbe attachment together with the crossed-blade
knife and the grinding discs.
5. a. Attach the worm housing to the motor unit and insert the worm (see ›Assembly‹).
b. Push the Kebbe attachment (back) onto the shaft of the worm. The narrow end
must point outwards. Turn the Kebbe attachment slightly while pressing it into the
worm housing.
c. Then insert the Kebbe attachment (front) with the wide opening over the Kebbe
attachment (back).
d. Now screw on the fixing ring and tighten it by hand.
6. Process the prepared dough for the wrappings with the mincer. Then cut the
wrappings into pieces of the desired length.
