- Plug the mains plug into the matching CEE socket with appropriate fusing.
- The pasteurizer is switched on using the main switch (17).
- Wait until the machine has started up. Unlock the EMERGENCY-OFF switch (15), if pressed,
and tap on Tap to unlock on the operator display (16).
- On the operator display (16), tap on the Production button.
- Press the heating ON/OFF switch (20, green button) down for 5 seconds to run the water pump
(3) manually and fill the water system. Once the button has been released, the pump switches
to automatic operation if there is enough water.
If a "Low water level" alert appears on the operator display (16), add more water to the water

tank (7). This alert may appear multiple times until the system is completely filled with water.
If a "Flame monitoring" alert appears in the operator display (16), acknowledge it by tapping on

- Press the heating ON/OFF switch (20, red button) to switch off the heating system and water
pump (3).
- The pasteurizer is now ready to operate.
- Set the desired target temperature for the juice.
- Set the target water temperature 4–5°C higher than the target juice temperature.
- Press the heating ON/OFF switch (20, red button) to switch on the heating system (water pump,
oil burner).
- Wait until the target water temperature has been reached.
- Switch the juice pump on via the juice pump ON/OFF switch (18, green button) to enable
production to start.
- To run the juice pump manually, hold the juice pump ON/OFF switch (18, green button) down
for over 5 seconds. This causes the pump to run at maximum speed until the button is released.
Use this operation to fill the heat exchanger juice pipe at the start of production until the
measured juice temperature at the juice outlet suddenly rises (until the entire heat exchanger is
filled). Once the button has been released, the pasteurizer is in operation.
8.3.2 Restarting Restarting after an emergency shut-down
- Ensure all faults present have been cleared or damage to the machine has been repaired.
- Unlock the EMERGENCY-OFF switch (15).
- Now take into service as you would after a scheduled shut-down.
