10.2. Basic recipe for citrus fruit sorbet

200 ml water
85 g sugar
Fruit as desired (e.g. an or-
ganic lemon)
10.3. Basic recipe for soft ice cream

1 egg (size M)
1 tbsp sugar
2 sachet of vanilla sugar
200 ml whipping cream
(cold)
25 g honey
1 squeeze of lemon
A pinch of salt

Extract the juice from the fruit, i.e. squeeze the lem-
on.
Heat the water and sugar in a pan until the sugar
has dissolved completely.
Remove the pan from the hob and stir in the fruit
juice.
Place the finished sorbet mixture into the refrigera-
tor for about 2 hours.
Pour the chilled sorbet mixture into the ice-cream
maker.
Select the "Soft ice cream" button to start the pro-
duction process.
Preparation time: approx. 50 minutes (time may vary
depending on the desired consistency).
Place all ingredients into a cup and combine well
using a hand blender.
Place the finished soft ice cream mixture into the
refrigerator for approx. 2 hours.
Pour the chilled ice cream mixture into the ice-
cream maker.
Select the "Soft ice cream" button to start the pro-
duction process.
Preparation time: approx. 60 minutes (time may vary
depending on the desired consistency).
