Making speciality coffees

Information and tips

Use only dark roasted espresso beans to
make your speciality coffees. Only this type
of bean is suitable for preparing a good es-
presso or cappuccino.
Even pre-ground espresso quickly loses its
aroma if it is not tightly closed and kept in a
cool place. We therefore recommend grind-
ing the espresso beans yourself to make the
ground espresso just before brewing.
13 to 15 grams of ground espresso is re-
quired for a coup of espresso. This is approx.
2½ level scoops of coffee (f).
It is also important to distribute the ground
espresso evenly in the portafilter and press
it to the bottom of the filter using the tamper
(c) (15–20 kg pressure). Without tampering,
the water would run too quickly through the
ground espresso and the coffee would lose
its exquisite aroma. Only by firmly and evenly
tampering the ground espresso can the es-
presso develop its full aroma.
A good espresso must be hot. Therefore, pre-
heat the espresso cups. The heated cup stor-
age (8) is suitable for preheating. Expedite
the process by filling the cups with hot water
and emptying them just before brewing.

Making espresso

1. If you haven't already done so, please:
– Fill the water tank (2) with fresh tap wa-
ter.
– Fill the bean hopper (1) with fresh es-
presso beans.
– Push the filter insert (d) you wish to use
into the portafilter (e) until it can go no
further.
2. Make sure that the steam regulator (3) is
turned to 'OFF'.
3. Connect the mains plug to an easily ac-
cessible socket.
4. Press the On/Off button (10) to switch on
the appliance.
The LED rings around the buttons will
pulse white. The appliance heats up.
If the LED rings steadily light up white, the
heat-up process is done and the appli-
ance is in standby mode.

5. Use the dial for setting the degree of
grinding (19) to select the desired de-
gree of grinding (1 = very fine, 5 = very
coarse). Start with setting 3.
6. Insert the portafilter (e) in the portafilter
holder for grinding (17).
