KNEADING HEAVY DOUGH
To properly choose the right speed, it is necessary
to observe the humidity of the heavy dough. Do not
use speed 2 for kneading heavy dough which has
the Absorption Ratio (AR) of 50% or less. To deter-
mine the absorption ratio of a product, divide the

6. MAINTENANCE

WARNING: All MAINTENANCE OPERATIONS MUST BE CARRIED OUT AFTER THE DEVICE IS DISCONNECTED
FROM THE POWER SUPPLY AND GROUNDING.
• Never use metal or hard brushes to clean the
mixer. Never clean the mixer with a jet of water.

• THE DRIP TRAY or THE POURING SHIELD must
be periodically checked for leaks of condensate

Example: Calculate the absorption ratio for the
mixture of 2,23 kg water and 4,5 kg fl our.
