OPERATION OF THE COLD CYCLES

It is important to divide the product to be processed in as many pieces as possible, so as to
increase the surface exposed to the action of the blast chiller.
NOT RECOMMENDED
Always prefer trays of less depth and in any case not deeper that 40 mm, in order not to
obstruct the airflow hitting the product. The minimum space to keep between one tray and
the other is 2 cm.
NOT RECOMMENDED
Use the entire surface available on the tray, spacing the products out appropriately. Do not
exceed the indicated weight.
NOT RECOMMENDED
It is advisable to operate blast chilling cycles on one type of product only or with products
with similar consistency and water content because each product requires a different cooling
time.
