BEFORE USE

POSITIONING THE OVEN
- Position the oven of a flat surface.

- The Duetto model can be moved on its wheels by simply pushing the unit or pulling it towards you. It is
important not to use excessive force when pushing or pulling the oven: move it slowly and delicately.
 T he oven
may only be moved when off.
- If the oven needs to be lifted over obstacles, the Duetto is provided with steel bars, which can be inserted
through the holes provided in the structure, to create side handles for lifting and repositioning by a suitable
number of people.
INSERTING THE STEEL BARS
1. Remove the rubber plugs from the 4 holes on the side of the oven.
2. Insert the two bars into the holes so that they come out of the other side of the oven.
3. Ensure they are correctly inserted. The oven can be lifted by a group of people using the handles.
- Do not push or pull the oven with excessive force, or lean on it.

- Before lifting the oven for repositioning, ensure that it is off and there is no refractory stone left inside.
HOW THE OVEN IS MADE
- The refractory stones inside the oven can be easily taken out to make
the Duetto lighter and therefore easier to move. After placing the
oven in position, place the refractory stones back inside the cooking
chamber, lower, Oven Flame and upper, Oven Brick.
- The Oven Flame contains 12 stones distributed into 2 layers, each 3
cm thick: 6 stones 20x40x3 cm; 6 stones 20x30x3 cm.
- The Oven Brick contains 18 stones distributed into 3 layers, each 3
cm thick: 15 stones 20x30x3 cm; 3 stones 50x10x3 cm.
- The Oven Brick is also equipped with a useful second Sliding Deck
in stainless steel: insert the deck by sliding it in between the lateral
guides. The sliding deck, when pulled out half way, makes it easier to
insert dishes for cooking.
- Follow the numbering in sequence when inserting the refractory
stones: repeat the step for each layer of the refractory deck
- Although the refractory stones are very resistant to high temperatures,
they are fragile and easily broken if struck or dropped: handle the
stones with great care.
The cooking decks have been designed to ensure easy assembly: the small space around the perimeter of the
refractory deck is necessary for the insertion of the stones.
