TIP:
The meat should be at room
temperature before preparation. This
allows reaching the desired cooking
degree better and results in a more
even crust.
Tuna or salmon fillets can also be
coated with a very thin tasty crust
even though they can even retain a
raw core in the middle. This effect is
hard to achieve on conventional grill
devices because there is always the
danger that fish is overcooked in the
middle and thus dry when the crust
is roasted perfectly on the outside.
