For autoclave models only:
• Weight-loaded relief and venting valve "P" located on the
hermetically sealed lid. It vents at a pressure of 0.05 bar.
• Always keep the valve clean and free from residuals that
could clog the venting path.

5 - CLEANING AND MAINTENANCE

Always disconnect the supply (gas, steam or
electricity) upstream from the appliance before
carrying out any cleaning or maintenance work.
• Have the appliance overhauled completely at least once a
year. Get a qualified technician to check the effectiveness of
the safety devices and lid balance at least once every six
months.
• Daily clean the steel parts with warm, soapy water, rinse well
and dry with care. Use a nylon brush to remove any stubborn
deposits.
• Any contact, whether continuous or occasional, with ferrous
material must be avoided at all costs so as not to risk
corrosion. For this reason, ladles, spatulas, spoons, etc. must
all be in stainless steel.
• For the same reason do not clean stainless steel with
ordinary steel wool pads, brushes or scrapers. If wanted,
stainless steel wool can be used, rubbing in the direction of
the satin finish.
• Add salt only when the water is boiling, any residuals must be
removed immediately each time after you have finished
cooking.
• Never use coarse lump cooking salt because, dissolving very
slowly, it could give rise to corrosion phenomena on the
bottom of the tank. For this reason use fine salt (finer than 3
mm) but if this is not available we suggest dissolving the salt
in hot water in a separate container.
• If the pan is not going to be used for long periods of time, rub
its steel surfaces briskly with a cloth soaked with Vaseline oil
or another specific product, leaving a protective film on it.
Also aerate the premises regularly.
• When the pan is not being used its lid must be left open.
• Remove and clean frequently the pan's safety valve, located on
the lid.

Do not wash the appliance with direct jets of
water or high pressure water because if any
water manages to penetrate the internal
components
it
could
operation and safety.
• Do not use chlorine-based products to clean the steel
(bleach, hydrochloric acid) or polyphosphates even if they are
diluted.
• Do not use corrosive substances (i.e. muriatic acid) to clean
the floor under the appliance.
• It is forbidden to make alterations to the combustion air
capacity or to the electrical system.
• The appliance is made with metal materials (stainless steel,
aluminated sheet metal, copper) in a percentage higher than
