Egg white frosting
180 g icing sugar, 1 egg white, a few drops of lemon juice. Recipe: Thoroughly sift the sugar (at least 3 times),
add the egg white and stir until a smooth cream is formed. Useful hint: To make coloured egg white frostings,
stir in some food colouring until well blended.
Buttercream
230 ml 2% milk, 100 g granulated sugar, 1 pack vanilla custard powder (40 g), 350 g butter, 1 tbsp rum, 1 pack
vanilla sugar. Recipe: Boil the semi-skim milk, granulated sugar and vanilla custard powder while stirring con-
stantly and then sprinkle with vanilla sugar. Whisk in butter and fl avour with rum while the custard is lukewarm.
Buttercream can be coloured with food colouring or with cocoa.
