1 - GENERAL INDICATIONS

This appliance is for cooking food in water and
must be used only by professionally qualified
personnel in the way indicated in this instruction
manual.
All other improper uses are dangerous.

1.1 - Instructions for the user

• Read all the information given in this manual carefully as it
gives important indications that ensure the safe and correct
use of the appliance.
• Keep this manual in a safe place for future reference.
• If any repairs are needed always and only contact a technical
assistance centre authorised by the manufacturer and
demand original spare parts.
• Only professionally qualified personnel are allowed to install
the appliance and regulate steam pressure (steam model) or
to convert to another type of gas (gas model) if required.
• To reduce the consumption of energy (gas, steam, electricity
and water) it is advisable not to use the appliance empty for
long periods of time or in conditions that will hinder an
optimum performance (i.e. lid raised, safety valves that keep
venting, etc.).
• The water used for producing steam and cooking food must
be suitable for human consumption and comply with the
following characteristics:
• Total hardness: 0.5 ÷ 5 French degrees
• Concentration of chloride ion (CL-) ~ 10 p.p.m. (parts per
million)
• pH greater than 7
• Electric conductivity: 50 ÷ 2000 µS/cm at 20°.
WARNING!
If water is used with specifications different from
those given here, the guarantee loses all validity.
CAUTION!
Open the lid with caution so as not to get burnt
by the steam or by touching hot parts.
In models with an autoclave lid, the lid must not be lifted until
you are certain there is no pressure inside the pan, pressing
the relief valve vent button "P" (see user instruction sheet)
• The clamps "Q" must be loosened gradually one at a time.
• Daily, when opening the lid, before letting go of the handgrip
check it stays up; have the balancing springs checked once
every six months by an specialized technician.
• Keep your hands from under the raised lid.
INSTRUCTIONS FOR USE

2 - COMMISSIONING

• Before using the appliance, wash the inside thoroughly with
hot water and a suitable detergent and then rinse well.
ATTENTION!
Never start the appliance before having filled
the pan (direct gas mod.) and jacket (electric and
indirect gas models) with water. Failure to
comply with this essential point would seriously
overheat the stainless steel container.

2.1 - Filling the jacket with water

(indirect gas and electric models)
• Open the maximum level cock "E".
• Remove the screw plug "G" that closes the jacket spout,
located on the safety unit.
• Pour water through the spout until you see a steady trickle
of water coming through cock "E".
• Close the cock and put the screw plug "G" back in place.
2.1.1 - Filling the jacket with water (indirect gas
and electric models) with visual level indicator (Z)
• Remove the screw plug "G" that closes the jacket spout,
located on the safety unit.
• Pour water through the spout until the maximum level is
reached, indicated by the visual level indicator (Z)
• Close the cock and put the screw plug "G" back in place.
IMPORTANT
• At the start of each day and with the appliance cold, check
that the water in the jacket has not dropped below the
minimum level.
• This check is carried out by opening the minimum level
control cock "F" from which water should always flow. If this
is not the case, immediately add water up to the maximum
level.
• For those models with the visual indicator in glass, check
(with the appliance cold) each time the appliance is used that
the water is not below the minimum level mark.

2.2 - Filling the tank

• Make sure the big tap "A" is closed.
• Turn the supply pipe "D" to the inside of the tank and open
the two cocks "B" and "C" of the hot or cold water.
The level of the water must be at least 4 cm under the
overflow edge and even lower if there is danger (in the
autoclave models) that the boiling food could clog the safety
valve on the lid.
• Close the lid.
• When closing the autoclave lid, the "Q" clamps must be
tightened gradually and evenly around the pan.
