Æbleskiver (Danish Doughnuts) – Ingredients for approx.
80 pieces
250 g all-purpose flour, 3 eggs
400 ml butter milk, 1/3 Tsp baking soda or backing powder
1 Tbsp sugar, ¼ Tsp salt, 50 g molten butter
According to taste use raisins, icing sugar, jam, chocolate
chips
Butter or edible oil for baking
Preparation/Rising Time: totally 1.5 hours
Separate the egg. Mix all ingredients (except of the egg
white) with a mixer for approx. 2 minutes at high speed.
Cover the dough and leave in a warm place for approx.
30 minutes.
Beat the egg white stiff and carefully stir in the beaten egg
white. Fill the dough in a jug with spout in order to pour
directly into the pan. Fill the hollows up to ¾ with dough.
Fry the Æbleskiver at medium energy supply and turn
around to fry on both sides until brown and crusty. Only
use a wooden skewer to turn the dough.
Serve directly from the pan or cover the ready doughnuts
and place in the oven to keep them warm.
According to taste top with icing sugar
Accompaniment: Apple compote, jam, syrup
