Dutch Poffertjes (Small Waffles) – Ingredients for approx.
4 portions
150 g all-purpose flour, 150 g sugar
1 sachet vanilla sugar, 4 Tsp backing powder
120 ml milk, 3 eggs, 1 Tsp sugar, 1 pinch of salt
According to taste use icing sugar and cinnamon
Butter or edible oil for baking
Preparation/Rising Time: totally 1 hour
Mix all lukewarm ingredients together. According to taste
add cinnamon. Cover the dough and place in a warm
place for approx. 30 minutes.
Take ½ - 1 tablespoon for each hollow and fill into the pan.
Or fill the dough in a jug with spout in order to pour directly
into the pan. Fry the Poffertjes at medium energy supply
and turn around to fry on both sides.
Sprinkle with melted butter and cover with icing sugar.
Accompaniment: Syrup, apple compote, jam.
Variations: Prior to turn the dough, add further ingredients.
Sweet variety: filled with jam, chocolate chips, cream etc.
Spicy variety: instead of sugar and vanilla sugar add ¼
Tsp salt and further ingredients such as bacon, diced
ham, grated Edam cheese etc.
