INDUCTION HEATING – PRINCIPLE
The hotplate (cooking zone) includes the coil, which is powered by strong alternating current. This coil
is made of copper wire, which is a very efficient conductor and significantly reduces the energy losses.
The coil creates magnetic field which produces heat in two different ways:
1. By effecting the magnet field on the electrically conductive bottom of the pot/pan, which inducts
vortex currents, which transform to the heat
2. Minor part of the heat can be obtained from the losses caused by hysteresis of the ferromagnetic
material of the vessel during the magnetization. This results in less than 10% of the total heat.
The heated pot/pan forwards the heat into its content.
The coil generating the induction flow has many threads, whereas the bottom of the pot has only one
single short-circuited thread. The combination of the coil and the pot functions as a transformer that
increases the flow through the pot material. The transfer of the electrical energy from the coil to the
pot and the heat production is similar to undesirable heat losses in the transformer.
Induction cookers are quicker and more effective than the traditional electric cookers and also
provides the ability of accurate regulation of the power and temperature. Unlike traditional cookers,
the pot (not the surroundings) is heated directly which reduces the chance of getting burnt. The
highest temperature during the induction cooking has the pot, not the cooker as during electric or gas
heating.
