FIRST LIGHTING

• The kitchen is equipped with a bypass valve, which,
when opening, facilitates the escape of smoke in the ue
minimizing the puffs of smoke in the environment, open
the valve (Figure 7.1.1 A)
• Clean the replace from any ash residues;
completely open the primary air adjuster ( g.7.2);
open the re door;
carefully place the wood pieces inside the combustion
chamber;
place a natural re starter on the stack;
add some crossed ne wood sticks;
light up the re starter from the top
close the re door
keep the air vent opened to ensure a high bright

slightly close the air vent only when proper grill base
is ensured.
7.3
RELOADING THE FUEL
To load fuel inside the machine while it is running, follow
the procedure below:
Close the bypass ( g.7.1.1 B).
Open the re door slowly to prevent the creation of
an air gap inside the replace that would cause the
smoke to escape in the environment (based on the
draught of the fume exhaust duct).
Reload the replace with fuel and then close the
re door.
Avoid overheating the cooker by loading an

ADJUSTING THE PRIMARY AIR
The cooker is provided with primary air adjustment
system for combustion control.
PRIMARY COMBUSTION occurs by the intake of air into
the replace, through the slits, adjusted using the knob
located at the bottom of the replace (Fig. 7.1.1):
• Turning the knob to the right gives faster combustion;
• By turning the adjustment to the left the combustion
will be slower..
Depending on time fro lighting greater will be the ame.
For the rst ignition of the day, or with damp wood, it
is advisable to completely the primary air to the grate.
Once the re is burning it is advisable to adjust the air
based on heating needs or how long you want the load
of wood to last.

TYPE OF FUEL

The cooker is to be fed preferably with mature beech
or birch wood or with lignite briquettes.
Each type of wood has different characteristics that also
in uence combustion yield.
Use of pinewood (pine, r) is not recommended as it
contains high quantities of resin substances that quickly

clog the ue.
It is forbidden to burn: pieces of bark, wood treated with
varnish, pressed wood panels, coal, plastic materials;
in this case, the guarantee on the appliance is no more
valid.
I M P O RTA N T: t h e c o n t i n u o u s a n d p r o l o n g e d
burning of wood types rich of aromatic oils (e.g.
eucalyptus, myrth, etc.) will cause the rapid corrosion
of the cast iron parts of the appliance.
The declared nominal yield of the cooker is obtained by
burning the right quantity of wood, making sure not to
overload the combustion chamber. The ideal length of
the wood is provided by the length of the log holder.

CONTROLLING COMBUSTION

When the re is lit, to maximise the ef ciency of your
heater-cooker, push the butter y valve forward BYPASS
VALVE (Fig.7.1.1 B to allow the smoke to be distributed
throughout the oven (this also provides maximum
cooking temperature). The oven heating valve is opened
preferably only during the lighting period (10 to 15
minutes). So, for maximum combustion control, the re
doors and the ash box door should be closed (Fig. 3.1
component 7 and component 9).
The re door and the ash box door can be opened by
hand if the purpose-provided protective glove is worn or
using tongs as shown in gure 7.2.1.
If the grill (Fig. 3.1 component 23) is in the lower position,
the fuel is loaded into the brazier and ignited through the
ash box door (Fig 7.2.2 ). If the grill is in the upper position
( Fig 7.2.3), the fuel can be loaded and ignited through
the ash box door. Only once the re is burning properly
can the wood or pellets be placed on the grill.
After each loading operation, it is advisable to operate
the heater-cooker at maximum power for at least half an
hour in order to prevent any water condensation due to
the evaporation of the fuel itself.
During operation, all the cooker surfaces get very hot;
caution: risk of burns. To avoid all such risks, the cooker is
delivered with accessories to open and close the handles.
7.6.1

Using the grill in the lower and upper position

In intermediate seasons such as spring and autumn, in
order to cook and heat, the grill should be positioned
