- Important: always unplug the lead from the mains before starting to clean the machine and
the motor!
- Do not remove the plug from the mains with wet or even slightly damp hands!
- Do not wash the machine, especially when it is plugged in, as the machine may short circuit!
- Do not allow children younger than 14 years old to use the machine!
- Do not leave the machine unsupervised, especially when it is plugged!
- Before removing or applying the motor to the machine, disconnect the power supply.
- Do not use the machine near to sources of heat, (e.g. oven hob rings) or in areas near to water (e.g. sinks)
- Use this machine only for the purposes described in this manual for no more than 15 minutes continuosly.
- Use only the cable supplied with the machine and polarized extension leads compatible with the current
indicated on the motor plate.
HOW TO PREPARE THE MACHINE FOR USE
Even if the ATLASMOTOR pasta machine can be used without being fixed down, for safety reasons we
recommend you always fix it to the table with the special clamp (Fig. 1). When using the machine for the first
time, clean it with a dry cloth to remove any excess oil. To clean the rollers, pass a small quantity of dough
through them and then throw the dough away.
When working with the motorised machine do not wear ties, scarves, or long chains; tie up long hair with a
clip and do not let children use the machine.
Please also check that your house-hold power supply also corresponds to that indicated on the motor plaque.
To detach the motor from the machine, turn the motor upwards by approx. 30° and pull it
outwards (Fig. 2).
To install the motor on the smooth rollers, hold it facing upwards at an angle of 30°, bring it close to the
machine and insert the pin into the roller hole (Fig. 3).
Push the motor until it rests on the side. Turn the motor downwards at an angle of 30° so that it hooks onto
the holes on the side.
HOW TO PREPARE THE MIXTURE
Serves 6 people.
Ingredients: 500 g (~ 1 lb) soft wheat flour and 5 eggs; instead of using 5 eggs you can use a glass of natural
mineral water. For "al dente" pasta, mix 250 g of soft wheat flour with 250 g of durum wheat flour.
Do not add any salt! Pour the flour into a bowl and the eggs into the middle of the flour (Fig. 4).
Mix the eggs with a fork until they are completely blended with the flour.
Knead the mixture with your hands (Fig. 5) until it is completely homogenous and consistent.
If the mixture is too dry add some water, if it is too soft add some flour.
A good mixture should never stick to your fingers.
Remove the mixture from the bowl and place it onto a lightly floured table (Fig. 6).
If necessary, continue to knead the mixture and cut it into small pieces (Fig. 7).
Advice: do not use eggs straight from the fridge!

Set the machine regulator to position 1, pulling it outwards and turning it so that the two smooth rollers are
completely open (approx. 3 mm) (Fig. 8).
Start the motor by setting the switch to pos. I (continuous) and pass a piece of mixture through the smooth
rollers (Fig. 9). Repeat this operation 5 - 6 times, folding the dough over and adding some flour to the middle
if necessary. (Fig. 10).
When the dough has taken a regular shape, pass it through the rollers once only with the regulators set on
number 2 (Fig. 11), then once again on number 3 continuing until you obtain the desired thickness: to make
round spaghetti we suggest you stop at number 4; for other types of pasta you can continue up to number 9
(minimum thickness approx. 0.2 mm).
With a knife, cut the dough crossways in pieces of approximately 25 cm (10 inches) long. Set the motor in the
position desired to make:
Spaghetti (Fig. 12) - Front rollers - dough at n. 4
Taglierini (Fig. 12) - Front rollers - dough from n. 5 to n. 9
Tagliatelle (Fig. 13) - Middle rollers - dough from n. 5 to n. 9
Note 1 - If the rollers won't 'cut', this means the dough is too soft: in this case you should pass the dough
through the smooth rollers, after adding some flour to the mixture.
Note 2 - However when the dough is too dry and cannot be 'caught' by the cutting rollers, add a little water
to the mixture and pass it once again through the smooth rollers. Place the pasta on a table-cloth and leave it
to dry for at least an hour. Remember that pasta can last a long time (1-2 weeks) if kept in a cool dry place.
Bring a pan of salted water to the boil (~ 4 litres per 1/2 kg of pasta) to which you will add the pasta.
Fresh pasta cooks in just a few minutes, averaging 2 - 5 minutes, depending on the thickness.
Stir gently and then drain the pasta once it has finished cooking.
In order to remove the cutting attachment from the machine, lift it up manually making it slide
along its tracks.
To install attachments onto the machine (Fig. 14), repeat this procedure in reverse.

MAINTENANCE OF THE MACHINE

- During use, clean the scrapers underneath the smooth rollers every so often with a piece of kitchen paper.
- Always remove the motor before cleaning the machine (and use the handle to turn the rollers).
- Remove the lead from the mains before cleaning the motor and before any maintenance operations!
- Should the motor stop working, you can use the handle supplied to continue your work
- Never wash the machine with water or in the dish washer! (Fig. 15).
- To clean the machine after use, use a brush or a wooden rod (Fig. 16).
- If necessary put several drops of vaseline oil on the ends of the cutting rollers (Fig. 17).
- Do not insert knives or cloths in between the rollers!
- After use, replace the machine and its accessories back in their original box.
- Any repairs which need to be made to the electrical parts must be carried out by trained personnel.
- Unauthorised persons are forbidden access to the inside of the motor.
