4. Now pull the blade towards you, applying
a little pressure up to the tip. With the knife
sharpener, you can also alternately pull the
blade back and then push it forwards.

Now angle the knife guide towards
the other side and repeat the sharpening
process, as each side of the blade is treated
individually to achieve a result on both sides.

6. Repeat this process until the desired shar-
pness is achieved.
7. Then pull the blade through the two polis-
hing discs as described above for a perfect
finish until you no longer feel any resistance.
8. Remove any residue from the blade with a
dry cloth before using the knife.
Wet grinding
With wet grinding, the grinding discs run in a
water bath. This ensures an even higher sur-
face quality on the cutting edge, as it absorbs
all grinding particles, such as metal particles,
which would otherwise be on the grinding
discs and the blade.
1. Fill only a little water up to the upper edge
of the stainless steel grinding block with the
grinding discs.
2. Carry out the sharpening steps exactly as
described above for dry sharpening.
3. Clean the knife under running water and
dry it with a soft cloth.
4. Then rinse the grinding block well with
water and dry it and, if necessary, the olive
wood handle.
