Dry sharpening
1. Hold the knife sharpener firmly by the hand-
le. Your hand is now well protected from the
blade by the handle on the sharpening block.
2. In the first step, insert the blade directly
behind the handle on the heel of the knife into
the V-shaped cut-out between the two 500#
grit Diablo sharpening discs and angle the
knife towards one side.
3. The lateral angled knife guide at an angle
of approx. 15 degrees creates a high contact
pressure when pulling the blade through.
