- the uniform arrangement of the goods, without empty spaces, assures the best operation of the
cabinet;
- it is best to first sell all the goods that have been in the cabinet for a longer time with respect to the
fresher incoming goods (foodstuff turnover).
N.B.The refrigerated cabinet is suited for maintaining the temperature of the product on display
and not for lowering it, so the foodstuffs must be placed in the cabinet only once they have
cooled to their respective preservation temperatures. Products that have been heated must
not therefore be placed in the cabinet.

13. Defrosting and water discharge

Roubaix refrigerated cabinets are designed for automatic off-cycle defrosting (electric defrosting only
on request), and automatic evaporation of the defrost water.
During defrosting, there is a slight rise in the temperature of the products displayed, that in any case
never exceeds the limits imposed by law. After defrosting the system quickly reaches the normal
working temperature.
WE RECOMMEND PROVIDING A DRAIN IN THE FLOOR TO SAVE ENERGY.
N.B.Periodically have a qualified installer check that the hydraulic connections are in a perfect
state.

14. Maintenance and cleaning

Warning: BEFORE ANY MAINTENANCE OR CLEANING OPERATIONS ARE CARRIED OUT, CUT
OFF POWER SUPPLY TO THE CABINET BY MEANS OF THE MAIN SWITCH.
Food products can deteriorate due to germs and bacteria.
Respect of the rules of hygiene is indispensable to ensure the safeguard of consumer health and
respect of the cold chain of which the grocery store is the last controllable link.
Cleaning of the refrigerating cabinets is distinguished as follows:
Cleaning the external parts (Daily / Weekly)
- Clean all the external parts of the cabinet weekly using neutral detergents for domestic use or soap
and water.
- Rinse with clean water and dry using a soft cloth.
- DO NOT use abrasive products and solvents that may in any way alter the surfaces of the cabinets.
- DO NOT spray water or detergent on the electric parts of the cabinet.
- DO NOT use alcohol to clean parts in metacrylate (Plexiglas).
Cleaning the internal parts (Daily)
Cleaning of the inner parts of the cabinet aims at eliminating all of the pathogenic micro-organisms so
as to thus better protect the foodstuffs contained.
Before carrying out the inner cleaning of a cabinet or of a part of one:
- Empty it completely of all the foodstuffs it contains;
- Cut off power supply to the cabinet by means of the main switch.
- Unmount all the removable parts such as display trays, various grids, etc., wash them with
lukewarm water and detergent mixed with a disinfecting liquid, and dry carefully.
- Carefully clean the bottom tray.
- To wash the inside of the cabinet basin with running water provision must be made, during installa-
tion of the cabinet, for a water drain outlet fastened to the floor.
- Regularly clean the drip and the drain, lifiting up, where necessary, the fan plate.
Cleaning the condenser (version with incorporated compressor unit)
Every thirty days it is necessary to clean the condenser (Fig. 5 Rif. 9) to eliminate any accumulated
dust:
- Remove the cover panel on the condenser;
- Clean it with stiff (non-metal) brushes or a vacuum cleaning, taking care not to bend or damage the
fins on the condenser.
