Traditional Raclette
INGREDIËNTS
• raclette cheese
• 2 or 3 potatoes per person
• pickles and/or pearl onions
• slices of raw ham
• salt and pepper
PREPARATION
• Boil the potatoes in their skins and serve them on a plate (sliced if so desired);
• Set up the raclette machine and let the cheese melt;
• Scrape the melted cheese onto a plate with the potato, pickle or pearl onion, and raw ham;
• After melting the cheese four or five times, a crispy edge will form on the edge of the cutting surface.
Remove this and place it over the melting surface so it becomes extra crispy and is scrapped off with the
next raclette. This crispy crust is called "religieuse" and is a delicacy that is traditionally offered to guests;
• Add pepper and nutmeg to taste.
Raclette can be varied to taste and is also delicious with, for example, baguette, tomato, mushrooms,
pineapple, olives, celery, broccoli and other vegetables. Goes wonderfully with a glass of dry white wine or
tea.
