Apply a bit of oil to the following units once a
month:
• end piece holder rod (1)

Sharpening of blade

7.1. Description of the sharpening unit

1. Grindstone
2 Whetstone
3 Spare stone
4 Stop nose
5 Adjusting knob
6 Deburring position
7 Grinding position

Warning !
Rotating blade ! Can sever fingers. Only use
the sharpening unit supplied along with the
machine for sharpening. The blade may be
sharpened by trained expert staff only.

7.2. Sharpening the blade

Sharpening of blade
Prior to the beginning of the grinding process, care-
fully remove all grease
and cutting remainders from the slicing machine.
• Clean the machine and the knife thoroughly
(chapter 5).
• Set the stop to the largest cutting thickness.
• Pull the carriage to the front.
• Set sharpening unit to zero position.

• Place the sharpening unit on the carriage in such
a way that the stop rail of the sharpening unit
is situated in the gap between the stop and the
carriage, and the sharpening unit make contact
to the rear carriage wall (1).
• Subsequently push the carriage with the sharpe-
ning unit in direction of the knife until the stop
nose of the sharpening unit makes contact with
the knife protection ring (2).
• Slowly close the stop by turning the adjusting
knob for the cutting thickness until the sharpe-
ning unit is clamped between the stop and the
carriage.

• Set the adjusting wheel of the sharpening unit to
1 (grinding) and switch on the machine. The grin-
ding process starts. The duration of the grinding
action depends on the condition of the knife.
• If a burr has formed at the knife blade, turn the
adjusting wheel to position 2 (deburring). Permit
the machine to run for some revolutions until no

burr can be seen.
• Use the red off button to switch the machine off
after the grinding process.
• Set the adjusting wheel of the sharpening unit to
0 position. Open the stop and pull the carriage
back. Remove the sharpening unit.
• Clean the machine and the knife (chapter 5).

7.3. Changing the blade

Warning !
The blade is sharp ! It can cause serious inju-
ry even when it is not moving. The blade may
only be changed by a service engineer.
Important !
The blade must be replaced: - If the spacing
between the blade edge and the blade guard
ring exceeds 6 mm.
