A Few Considerations
Rock Salt vs. Other Salt
Rock salt (a.k.a. ice cream salt) is sold in most supermarkets in
the salt/spice section (you'll usually find it on the bottom shelf).
Rock salt is your best option, but kosher salt or sea salt will
also work. If you do use kosher or sea salt, you'll want to add an
additional
cup to the mix.

And NEVER use de-icing salts. The chemicals in de-icing salts
(calcium chloride or potassium chloride) should never be used in
or around any food items.
All About Milk & Cream
We listed a few milk and cream products to the right in order of
increasing levels of butterfat. The milks and light creams at the top
of the list will give a lighter ice cream while the heavier creams at
the bottom will cre ate a heavier, yet creamier, ice cream. Note that
most premium ice creams are made with heavy creams.
Expect to spend longer playing and freezing with the products at
the top of the list (35–40 minutes) versus the ones at the bottom
(25–30 minutes).
