Taste and flavour of most fondue sauces diminish, when kept hot at too high
temperature and for a too long time. For example: tomato sauce containing cap-
sicum may get bitter. Sauces containing fresh herbs and spices may get stale.
Use the following temperature guide for selecting the appropriate temperature.
Temperature
Used for ...
Low temperature
delicate sauces and dips;
heating up glutinous sau-
ces that may splash during
heating.
In general, avoid high
temperature settings,
because this type of sau-
ces may curdle easily or
get burnt or lumpy.
Medium temperature keeping the content of the
fondue pot hot.
Maximum
heating up non-sensitive
temperature
sauces.
The content of the fondue
pot gets hot much faster,
when using the maximum
temperature setting first.
After heating, reduce the
setting to an appropriate
medium temperature.
